Apricot Crumble Pot

170g tinned apricots
1 tsp cornstarch
1/8 tsp ground ginger 1/8 tsp ground cinnamon 2 tsp maple syrup
For the crumble:
2 tbsp rolled oats (gluten free if required) 1/4 tsp cinnamon
2 tsp butter
INSTRUCTIONS
Start by preheating oven to 180°C/350°F/Gas 4.
Toss together the apricots, corn starch, ginger, cinnamon and maple syrup and place in a ramekin. In a separate bowl, mix together the rolled oats, cinnamon, and butter. Use your hands to mush the butter into the oats. Transfer oats to the ramekin and cook for 20 minutes or until golden and bubbling.
