CRE­ATE YOUR OWN: Spiced caramel (makes two jars)

You will need… 400g caster sugar 250ml wa­ter 200g but­ter 200ml whip­ping cream 2 cin­na­mon sticks 6 whole cloves 2 whole star anise 1tsp mixed spice Pour the caramel through a sieve to re­move the spices and pour into jars when slightly cooled.

Here’s how: Put the sugar, wa­ter and spices in a pan and bring to the boil. Keep it gen­tly bub­bling un­til it turns a golden caramel colour. Add the but­ter and stir un­til melted. Take off the heat and slowly mix in the cream.
