CREATE YOUR OWN: Spiced caramel (makes two jars)
You will need… 400g caster sugar 250ml water 200g butter 200ml whipping cream 2 cinnamon sticks 6 whole cloves 2 whole star anise 1tsp mixed spice Pour the caramel through a sieve to remove the spices and pour into jars when slightly cooled.
Here’s how: Put the sugar, water and spices in a pan and bring to the boil. Keep it gently bubbling until it turns a golden caramel colour. Add the butter and stir until melted. Take off the heat and slowly mix in the cream.
