If you’ve over in­dulged dur­ing the fes­tive sea­son you’re most likely think­ing how you can strip back your diet to shed a few pounds. How­ever, you don’t have to fol­low a strict ‘diet’ to be healthy, as Jen­nifer Irvine, the founder of Pure Pack­age and author of The Bal­ance Diet ad­vo­cates.

Jen­nifer started The Pure Pack­age – a gourmet food de­liv­ery com­pany – af­ter ar­riv­ing in the UK from Ire­land in her early 20s and iden­ti­fy­ing a need among busy city work­ers for con­ve­nient food that was also healthy and de­li­cious.

Now liv­ing in Vir­ginia Water with her hus­band and four daugh­ters, Jen­nifer cooks up nour­ish­ing dishes from her kitchen and the fab­u­lous tree house in her gar­den. Here she shares some of her favourite post-christ­mas healthy ‘up­cy­cling’ recipes.
