This card comes at the perfect time, as in March we also celebrate the Spring equinox, and enter the season associated with earth foods – fruit and vegetables that nature provides in abundance.
THIS MONTH’S FOOD
As we become more mindful of nurturing not just ourselves but the planet, why not opt for a meat-free meal at least once a week, benefiting not only you, but the environment too.
A meatfree diet can help lower cholesterol and blood pressure, plus those who enjoy meat-free meals tend to have a lower body mass index.
Aubergines – used as a vegetable although, like tomatoes, technically a fruit – often get overlooked when it comes to delicious ingredients, but they are so versatile and filling. Try them once and you’ll be hooked for good!
They are virtually fat free, low in calories and sodium, high in folic acid, a good source of fibre and packed with minerals essential for the effective functioning of the body. Consider using aubergine to replace more calorific ingredients, such as potato. Its texture also makes it a great meat substitute for those going veggie.
And, as a tip, if you find aubergines are a little too watery for your liking, sprinkle slices with salt and let them sit for 20 minutes to release the water, then blot them with a paper towel.
