Crispy cabbage

SESAME MISO ROASTED RED CABBAGE (Serves 4)

METHOD

1. Preheat the oven to 200°C/180°C fan/gas mark

2. Spread out the cabbage wedges on a baking tray, toss with the oil and season lightly. Roast in the oven for 30 minutes.

3. Meanwhile make the dressing by whisking together all the ingredients. After the 30 minutes, use a pastry brush to coat the cabbage pieces in the dressing then turn the oven up to 240°C/220°C fan/gas mark 9. Return them to the oven for a further 15 minutes until cooked through, caramelised and beginning to get a little crisp at the edges.
