We’re so used to easily available fresh produce that we take it for granted, rather than recognisin­g the true cost of bringing out-of-season food to our doorsteps. Transporti­ng fresh produce long distances uses energy in transport, storage and infastruct­ure as well as increasing pollution and environmen­tal damage.

PRESERVE THE BEST

Stop and think about what is genuinely local and seasonal, and at the same time, support local suppliers who can provide these foods fresh, and also preserved to enjoy throughout the year. Locally-made jams and preserves, along with chutneys, smoked fish and meat, and delicious cheeses can all provide tasty menu options throughout the year, while supporting local food producers helps cuts down on food miles as well as many other costs to the environmen­t.
