Day-be­fore roast pota­toes

Use what­ever oil or fat you like, ex­cept turkey fat, which is too gamy. Rape­seed oil makes for lovely yel­low pota­toes, and is ve­gan-friendly, but for vege­tar­i­ans, adding a dol­lop of but­ter to the oil helps the pota­toes brown up.
