You need to start the salmon preparation two days ahead.
MAKES 12 SLICES INGREDIENTS
300g salmon side fillet, skin still on
100g raw beetroot, grated 1 tbsp dill, finely chopped, plus extra fronds to serve
30g white granulated sugar 20g sea salt
2 tbsp gin
Zest and juice of 1 small blood orange
Seeds from ½ pomegranate
