Seafood and fish seem to strike fear into the hearts of many people, even those who are fairly confident in the kitchen, but this really needn’t be the case. These dishes are centred around the versatile roasting tin. It’s perfect for low-maintenanc­e suppers: simply pop the ingredient­s in and – with perhaps just a bit of stirring and sprinkling – voilà, out comes a full meal.

I have largely tried to steer clear of overly expensive ingredient­s, as fish is on the dearer side as it is. I’ve also tried to avoid those fish that are, across the board, hugely on the decline; however, this isn’t very clear-cut, as fish stocks differ greatly from area to area, so you may want to do a little research into the situation in your region. Let’s try to be conscienti­ous fish eaters!
