In these dark, early days of the new year I yearn for colour in my cooking. It feels sinful to long for dishes as bright as a rainbow when my seasonal barometer reads ‘stew and mash’ or, more gloomily, ‘time to eat less’. So searched the supermarket shelves for ingredients that feel right to eat in January but which are not monochrome. And yes, I observed the need to eat healthily, while not exactly avoiding butter. The results range from green braises of beans to eat with grills and roasts, to a clear beef and beetroot broth to pour over potatoes or other vegetables. For a month normally forecast dull and even a little depressing, I have made some cheering surprises.
