Rose Prince’s fresh new look for Jan­uary food

In th­ese dark, early days of the new year I yearn for colour in my cook­ing. It feels sin­ful to long for dishes as bright as a rain­bow when my sea­sonal barom­e­ter reads ‘stew and mash’ or, more gloomily, ‘time to eat less’. So searched the su­per­mar­ket shelves for in­gre­di­ents that feel right to eat in Jan­uary but which are not mono­chrome. And yes, I ob­served the need to eat healthily, while not ex­actly avoid­ing but­ter. The re­sults range from green braises of beans to eat with grills and roasts, to a clear beef and beet­root broth to pour over pota­toes or other veg­eta­bles. For a month nor­mally forecast dull and even a lit­tle de­press­ing, I have made some cheer­ing sur­prises.
