Ster­il­is­ing jars and bot­tles be­fore use will en­sure your pickle juices keep for much longer.

The sim­plest and quick­est way is to put them in a dish­washer (don’t put rub­ber seals in – just rinse with boil­ing wa­ter). Or, heat your oven to 140C/120C fan/ gas mark 1. Wash your jars in hot soapy wa­ter, rinse well, then place on a bak­ing tray in the oven un­til they’re com­pletely dry.

Wash all jar lids with hot, soapy wa­ter then leave to dry, mouths fac­ing up, on a clean tea towel.
