Sterilising jars and bottles before use will ensure your pickle juices keep for much longer.
The simplest and quickest way is to put them in a dishwasher (don’t put rubber seals in – just rinse with boiling water). Or, heat your oven to 140C/120C fan/ gas mark 1. Wash your jars in hot soapy water, rinse well, then place on a baking tray in the oven until they’re completely dry.
Wash all jar lids with hot, soapy water then leave to dry, mouths facing up, on a clean tea towel.
