Think of this as a cider spritz. — 25ml London Dry Gin — 25ml Cocchi Rosa or similar — 10ml lemon juice

— 50ml fresh pomegranat­e juice — ice cubes — dry apple cider — pomegranat­e seeds and apple slice (to garnish) Pour the gin, Cocchi Rosa, lemon and pomegranat­e juices into a wine glass filled with ice cubes. Top with apple cider and garnish with an apple fan and pomegranat­e seeds.

To make a large batch

Add 250ml gin, 250ml Cocchi Rosa, 100ml lemon juice and 500ml pomegranat­e juice to a two-litre jug and top with a dry apple cider. Stir and serve over ice.
