Saturday supper club sizzling summer treats
Claire Thomson’s
Even if you don’t have children, there’s always a point in the year, near the end of July, when we all experience a school’s-out-forsummer feeling. It must be in our make-up, ingrained in our psyches from around the age of four, that now is the time to take your foot off the pedal – if only for a little while, if only for a weekend. I have three schoolaged children who by now feel completely exhausted and ready for the holidays.
Throwing virtuousness out the window, there are, shockingly, no green vegetables in this menu: I intend the beef burgers, draped with mozzarella and a basil sauce, to be served with chips, which are deep-fried then dressed with a garlic and rosemary butter – after all, this is once-a-year eating. Wash the lot down with raspberry rose-lemonade floats, a beautiful flashback – all frothy and fizzy – to our youth.
