It doesn’t matter if it’s bright and sunny outside or pouring with rain – there are some days when I just need to cook something that cheers me up. It might be when I’m stressed, or when the night before has been a bit boozier than planned, but I seek out indulgent dishes that can make me feel like the world is right once again.

I’ve always loved those packets of fresh tortellini you can pick up in the supermarke­t. My bolognese

bake takes them to the next level, cooking the pasta with a speedy ragu and a blanket of cheese. It’s cosy and delicious, and very hard to stop at one bowl. The shakshuka is just as moreish; really a breakfast dish, but sophistica­ted enough to eat at any time, it stars eggs poached in a rich tomato sauce. To make it feel extra special, this one is served with za’atar – a fabulous Middle Eastern spice mix – and mozzarella toasts.

Plus, Indian food is a Sunday staple in my house, and my easy version of butter chicken is the ultimate comfort classic. It’s divine.
