I remember the excitement of going to university like it was yesterday – and the madness, too, of cooking in a shared kitchen with limited workspace. Some didn’t (and still don’t) have much more than a microwave and a couple of hob rings, which stumped me as I grew up without the former. I just couldn’t get my head around the fact that it could do much more than reheat tinned beans! Since then, I’ve come to appreciate its versatilit­y, and reckon it deserves to be put to much better use than just cooking ready meals.

I’ve given measuremen­ts in spoonfuls and pack sizes as well, because if you’re taking these recipes to uni, you might not have scales. But the dishes are not reserved for students. These are for anyone who is cooking with limited space or just wants dinner on the table with minimum fuss. You might just marvel at what a microwave can produce.
