CHOCOLATE CHERRY MUG CAKES

Everyone needs a chocolate hit now and then, and these chocolate mug cakes are my favourite. They’re laced with dried fruit to make them even more decadent. A dollop of whipped cream or ice cream and you’re good to go.

SERVES 1

– 1 tbsp cocoa, plus extra to serve

– 3 tbsp caster sugar

– 3 tbsp self-raising flour – 2½ tbsp milk

– 1½ tbsp flavourles­s oil – drop of vanilla extract (or almond extract)

– 1 tbsp dried cherries (or other dried fruit, or chopped nuts), plus extra for serving

– 1 heaped tbsp chocolate chips or chopped chunks – whipped cream, or ice cream, to serve

In a large microwavea­ble mug, mix the cocoa, caster sugar, self-raising flour and a pinch of salt together with a fork. Add the milk, oil and vanilla (or almond) extract, and whisk until smooth.

Roughly chop the dried cherries and mix into the batter along with the chocolate chips or chunks, then pop the mug into the microwave for 60 seconds. Check it is cooked through; if not, microwave for 15-30 seconds longer until just cooked through.

Serve with whipped cream or ice cream, a few dried cherries and a dusting of cocoa.
