Boozy baking
Sir – Further to Sandra Hancock’s letter (September 18) about blackberry gin and vodka, I would add that when I made bramble whisky and the time came to strain out the fruit, my wife used the pulp to put in a sponge and some cupcakes. Nothing was wasted and the results were delicious. Roger Barclay

Sir – I would love to have taken Sandra Hancock’s advice on home-produced spirits. This year the field near our house was bursting with sloes, blackberries, rose hips and crab apples. However, this week a farmer came to pulverise the hedgerows and all the fruit along with them. So much for managing the countryside. Michael Cattell
