Christmas is the perfect time of year to serve game to your family and guests. Not only does it fill the house with glorious traditional smells and look rather impressive but it also lends itself perfectly to the essential festive flavours of booze and winter spices.

For this December issue i give you three dishes that will help add extra cheer to your festive parties. they are all laced with Christmas ‘spirit’ and spice and are suitably bright and colourful. i have tried to keep pan usage to a minimum – washing up is certainly not an enjoyable part of the celebrations – and lots of the elements can be made ahead of time and finished at the last minute, giving you more time to join in the fun and games.
