100ml rosé port (we use Of­fley, which you can get from Waitrose, Ocado, Ama­zon and spe­cial­ist drinks shops) Juice of ½ lime 125ml gin­ger ale 1 lime wedge and 1-2 straw­ber­ries, to gar­nish This spirit-free cock­tail fea­tures the less well-known rosé port, which com­bines the del­i­cate taste of rosé with the rich­ness of good port. Lead­ing with herbal notes and ripe red fruits, it’s a won­der­ful cock­tail for the sum­mer months, and gives port a new lease of life.

Fill a bowl glass or large wine glass with ice cubes. Add the port, then squeeze in the lime juice. Add a gen­er­ous splash of gin­ger ale and stir with the han­dle of a long spoon. Gar­nish with a wedge of lime and a straw­berry or two, and get ready to wel­come sum­mer.
