Let­tuce soup

I’m not sure who came up with the

idea of cook­ing let­tuce, but they should be ap­plauded be­cause, how­ever ridicu­lous it may seem, a cooked let­tuce will al­most al­ways tri­umph. There is with­out ques­tion a place for a cool, crisp and raw salad leaf, but on these half-sum­mer, half-win­ter days of spring, I need some per­sua­sion to eat a let­tuce: these two recipes have my arm twisted.
