Makes 10

70cl bour­bon (ie, 1 bot­tle) – we use Jim Beam

100g gran­u­lated sugar

½ bunch mint, leaves picked

2 peaches, prefer­ably ripe ones, quar­tered and stoned

1 cin­na­mon stick

This is a great drink for bud­ding mixol­o­gists look­ing to whip up a re­fresh­ing sum­mer cock­tail, or to im­press the neigh­bours at bar­be­cues. It’s very easy, too.

Pour the bour­bon into a large, ster­ilised jar. Add the sugar, stir to dis­solve, then add the mint leaves, peach quar­ters and cin­na­mon stick, seal and leave to steep for at least 48 hours.

To serve, pour out 60ml per serv­ing over ice into a glass and stir for 30 sec­onds un­til the glass is chilled to the touch.
