It de­pends on the pop­ulist. Tech­ni­cally speak­ing, some ar­gue the op­po­site of pop­ulism would be plu­ral­ism or elitism.

But dif­fer­ent pop­ulists have var­ied ad­ver­saries: the Davos set, the Bilder­berg group, Chris­tian democrats, so­cial democrats, lib­er­als, tech­nocrats, cen­trists, to­tal­i­tar­i­ans, mi­nori­ties. (And jour­nal­ists.)
