Here at The Herald on Sunday the argument has been settled – summer is definitely over. The bad news is it’s time to prepare for long, cold nights, and short, grey days. The good news is we can now look forward to the food Scotland does best – hearty, warming and wonderful. We’ve teamed up with some of the country’s top chefs to give you six autumnal recipes that will make you glad the weather is bad

AS THE nights get longer and the days shorter we are all starting to think about moving away from the summer salads and moving towards hearty and cosy dishes, the ones that will keep our stomachs full and warm for the whole night.

We are also seeing a change in the Scottish produce that is available, so restaurant­s are beginning to change their menu offerings to welcome in autumnal produce. Expect to see root vegetables, game and autumnal fruits making an appearance.

But it’s not just in restaurant­s that our tastes are changing – a new menu is appearing at home to complement the darker nights.
