Preserved heritage
was intrigued to read that UNESCO have put Ukraine’s “national dish”, borscht, on to its endangered heritage list. It set me to thinking that now that British Jewish cuisine is becoming increasingly Ottolenghified and with a friendly invasion of Israeli chefs, we should apply to the United Nations for endangered status for at least the following soul foods: schmaltz herring, kneidlach, gribenes, fissnogge and eingermacht.
As well as that, even David Attenborough would be stretched to find the increasingly rare gefilte fish, which can now only be seen bottled in imported gunk in jars, rather than the delicious homemade variety.
