There is a restau­rant called DiverXO in Madrid, and the chef Dabiz Muñoz also has a restau­rant called StreetXO and there is one in Lon­don. He pushes the Span­ish with the Asian. And he has this sand­wich – it’s like a bao. A crispy bao with suck­ling pig, fried quail’s egg, chilli mayo, which is di­vine. Now and then I go there just to eat this, be­cause it is so good.
