SIR: Virginia Ironside’s correspond­ent who is so concerned at the thought of a Christmas dinner without the complete carcase of a turkey (November issue) might consider a goose-turkey-duckchicke­n-less Christmas for a change.

My wife prepares a delicious chestnut roast which has been our traditiona­l Christmas fare for many years.
