Red-hot Three Pepper Soup

Tasty healthy lunch with a kick. Serves 4. Ingredient­s

5 red peppers, halved and deseeded, 2-3 red chillies, 3 tbsp olive oil,1 onion, diced,1 large carrot, peeled and diced,1 garlic clove, crushed, 1tbsp sweet smoked paprika, 800ml vegetable stock, sea salt and black pepper. Method

1 Preheat the oven to 180C fan/350f/gas 4. Put the peppers and chillies on a baking sheet and drizzle with 1tbsp olive oil. Toss to coat, then bake for 25-30 minutes or until softened. 2 Heat the remaining oil in a saucepan over a low heat. Add the onion, cook for 5 minutes, beginning to soften. Add the carrot, garlic and paprika and cook for 5 minutes more.

3 Raise the heat, add stock, cover and bring it to the boil, then reduce to a simmer and cook for 10-15 minutes.

4 When the peppers are cooked, add them to the pan. If you are confident the chillies won’t be too much, add them too.

5 Remove the pan from the heat and blend with a stick blender or transfer to a liquidiser and blitz until smooth. Season with salt and black pepper and serve with cheesy croutons.
