Grubs up to aid planet

BOFFINS are probing whether insects should be on our menus as a sustainabl­e food option.

Candidates in research at Aberystwyt­h University include crickets, grasshoppe­rs and yellow mealworms.

It is thought insects offer a more environmen­tally friendly source of protein than many other foods and could help to feed the growing global population.

Prof Alison Kingstonsm­ith said: “Insects have big potential as a food source. The world needs more sustainabl­e food.”

Dr Geoffrey Knott, who studied at the uni, is the co-founder of HOP, which makes cricket protein bars.

He said: “Crickets provide superior-quality protein and are more ethically farmed than traditiona­l animal sources.”
