Falafel Burger

These quick, eco­nom­i­cal recipes are ideal for the stu­dents in the fam­ily.

Serves: 4

1 x 400g can chick­peas, rinsed and drained

1 gar­lic clove, chopped 1 hand­ful pars­ley, chopped 1 tsp ground cumin

1 tsp ground co­rian­der

½ tsp harissa paste or chilli pow­der

2 tbs plain flour

2 tbs sun­flower oil

Salt and freshly ground black pep­per, to taste

To Serve: Prim­ula Orig­i­nal Cheese; brioche buns; rocket; red onion slices

1 Place all in­gre­di­ents into a food pro­ces­sor and sea­son to taste. Blend un­til coarse. (If you don’t have a food pro­ces­sor, place the in­gre­di­ents in a mix­ing bowl and blend with a hand-held blender. This will take a lit­tle longer.)

2 Care­fully re­move the blade from the pro­ces­sor and, us­ing your hands, form the mix­ture into 4 large burg­ers.

3 Be­fore cook­ing, brush lightly with oil. Place on a skil­let or in a heavy-based fry­ing-pan and cook for 3 min­utes on each side un­til lightly golden.

4 Serve on a brioche bun with melty Prim­ula Orig­i­nal Cheese, rocket and red onion slices.
