Sparkly Sloe Gin Jellies
Prep Time: 25 mins plus infusion and setting time Cooking Time: 5 mins

50 g (2 oz) granulated sugar
2 broad strips orange rind 5 leaves gelatine
175 ml (6 fl oz) sloe gin 350-375 ml (12 fl oz) sparkling white wine/ Prosecco/Cava
To Decorate: blueberries; icing sugar (optional)
1 Warm the sugar in a pan with the orange rind and 150 ml (¼ pint) water. Stir until the sugar dissolves. Bring to the boil. Take off the heat and leave for 30 minutes to infuse.
2 Soften the gelatine in a bowl of cold water for 5 minutes.
3 Warm the orange syrup and remove the orange rind. Squeeze the water out of the gelatine, add it to the syrup and stir well until dissolved. Pour into a large jug, stir in sloe gin and leave until starting to set.
4 Gradually stir in the wine and stir every so often until most of the froth has subsided and the jelly is setting again. Pour into shot glasses (or cocktail glasses). Chill for 4 hours or overnight until set. Decorate with fresh blueberries and a dusting of icing sugar, if you like. These jellies are quite boozy and a small portion
