Sparkly Sloe Gin Jel­lies

50 g (2 oz) gran­u­lated su­gar

2 broad strips orange rind 5 leaves gela­tine

175 ml (6 fl oz) sloe gin 350-375 ml (12 fl oz) sparkling white wine/ Prosecco/Cava

To Dec­o­rate: blue­ber­ries; ic­ing su­gar (op­tional)

1 Warm the su­gar in a pan with the orange rind and 150 ml (¼ pint) wa­ter. Stir un­til the su­gar dis­solves. Bring to the boil. Take off the heat and leave for 30 min­utes to in­fuse.

2 Soften the gela­tine in a bowl of cold wa­ter for 5 min­utes.

3 Warm the orange syrup and re­move the orange rind. Squeeze the wa­ter out of the gela­tine, add it to the syrup and stir well un­til dissolved. Pour into a large jug, stir in sloe gin and leave un­til start­ing to set.

4 Grad­u­ally stir in the wine and stir ev­ery so of­ten un­til most of the froth has sub­sided and the jelly is set­ting again. Pour into shot glasses (or cock­tail glasses). Chill for 4 hours or overnight un­til set. Dec­o­rate with fresh blue­ber­ries and a dust­ing of ic­ing su­gar, if you like. These jel­lies are quite boozy and a small por­tion

is plenty.
