Annie says: Cooked apricots turn divinely tender, sweet and sour. How can anyone not like them? Yet I live in a household where they are shunned, even by my children’s friends. But I’m not giving up, because there’s a small chance that you just might love them as much as I do.
■ 4 apricots, halved and stoned ■ A knob of butter
■ 1 tbs dark rum
■ 2 pieces of nougat Kit: Barbecue, foil, sharp knife 1 Arrange the apricot halves on a piece of foil and make the sides of the foil into a boat.
2 Dot the fruit with the butter, drizzle over the rum, then place a sliver of nougat in each apricot half.
3 Cook in a covered barbecue for 10 to 15 minutes, until the fruit and nougat are softened.
Remember: recipes have been given in both metric and imperial. It is important to use one method throughout as they are not exactly the same.
