A “Nice Supper Dish”
Course: Lunch or supper Skill level: easy Serves: 4 (makes 8)
A little butter for greasing About 100 g (3½ oz) chopped cooked ham Equal amount of fresh breadcrumbs
4 to 6 eggs, beaten Salt and pepper, to taste To Serve: tomatoes; potatoes; tomato sauce
1 Pre-heat oven to 220 deg. C., 425 deg. F., Gas Mark 7. Grease a patty tin or a muffin tin.
2 In a bowl, mix the chopped ham and breadcrumbs together. .
Divide the mixture between the patty tin cups, leaving some to sprinkle over the top.
3 Add salt and pepper to the beaten eggs and pour over the ham and bread mixture.
4 Sprinkle over the remaining ham and breadcrumbs and bake in the pre-heated oven for 10 minutes or until they are puffed up and golden brown.
5 Serve with tomatoes, potatoes and tomato sauce.
