2 chicken breasts, skinned
25 g (1 oz) butter, softened
1 garlic clove, peeled and crushed 1 tbs chopped parsley
Salt and freshly ground black pepper, to taste
1 tbs plain flour
1 tbs grated Parmesan cheese 1 egg, beaten
50 g (2 oz) cornflakes
1 Pre-heat the oven to 180 deg. C., 350 deg. F., Gas Mark 4.
2 Cut a small slit horizontally into chicken. 3 Mix together the butter, garlic, parsley and seasoning. Push the mixture into the chicken pockets.
4 In a bowl, mix together the flour and Parmesan.
5 Dust the chicken in the flour and Parmesan mixture, then in the beaten egg and then in the cornflakes.
6 Place on a baking tray and bake in the pre-heated oven for 20 to 25 minutes, until cooked and golden.
