Chicken Kiev

2 chicken breasts, skinned

25 g (1 oz) but­ter, soft­ened

1 gar­lic clove, peeled and crushed 1 tbs chopped pars­ley

Salt and freshly ground black pep­per, to taste

1 tbs plain flour

1 tbs grated Parme­san cheese 1 egg, beaten

50 g (2 oz) corn­flakes

1 Pre-heat the oven to 180 deg. C., 350 deg. F., Gas Mark 4.

2 Cut a small slit hor­i­zon­tally into chicken. 3 Mix to­gether the but­ter, gar­lic, pars­ley and sea­son­ing. Push the mix­ture into the chicken pock­ets.

4 In a bowl, mix to­gether the flour and Parme­san.

5 Dust the chicken in the flour and Parme­san mix­ture, then in the beaten egg and then in the corn­flakes.

6 Place on a bak­ing tray and bake in the pre-heated oven for 20 to 25 min­utes, un­til cooked and golden.
