Nepalese curry to try at home

Krishna Kris from Gurkha Lounge in Hampton Vale brings you a favourite from his menu to make for yourself

Every Nepalese will have a version of this traditiona­l chicken curry recipe - a bhutuwa - and here is one put together by restaurate­ur Krishna Kris from Gurkha Lounge in Hampton Vale.

This is his take on the dish, which is the most popular on his menu at the restaurant in Stewartby Avenue, prepared by his head chef Nan Thapa, pictured.

“It’s a Nepalese style chicken curry,” says Kris. “Every Nepalese will have a version of this recipe. I have made my own version of it and hope that you will like it.”

INGREDIENT­S:

1000 gm chicken

1 tsp Salt

1 tsp lemon juice

1 tsp sliced garlic

2 small onions, chopped 2 tomatoes, chopped 1 tbsp. Ginger and Garlic paste

1 tbsp. Vegetable oil 1 tbsp Coriander powder 1 tbsp Cumin powder 1 tsp Chilli powder

1/2 tbsp Chilli crushed 1 tsp Turmeric powder 1 tsp chopped coriander 1 tbsp green chilli Heat vegetable oil in a pan and add chopped onions . Sauté onions until light brown in colour and add chopped tomatoes then cook for another 2 minutes.

Add the chicken and sauté to seal from all sides. Add sliced garlic, ginger and garlic paste, salt and saute until fragrant.

Add the all spice powder and cook on medium heat until chicken is cooked. Add a little water to keep the moisture in the pan.

Add chopped coriander or add chopped green chilli to your taste.

Your chicken bhutuwa is ready to serve.
