A gap in the mar­ket for smoked cheese from Orkney saw Cal­lum and Fiona Macinnes set up The Is­land Smok­ery. It started small but the com­pany has grown to sup­ply out­lets not just on Orkney but also across Scot­land and the north of Eng­land. The cheese, in 20kg blocks, is smoked in cus­tom-built smok­ers and cur­rent blend pack­ages in­clude High­land Park sin­gle malt, cran­berry and cracked black pep­per. www.the­is­landsmok­ 
