One of the most pop­u­lar re­fresh­ments hand-crafted by this Pit­sligo com­pany is Wal­ter Gre­gor’s tonic wa­ter. Gre­gor was a 19th cen­tury min­is­ter in the vil­lage, and his gar­den is used to grow some of the botan­i­cals used in mak­ing the tonic wa­ter. “We have a small team who grow the botan­i­cals and bot­tle the drinks in a con­verted steading a few fields away from his old manse,” says owner Claire Ren­nie. “We have ben­e­fited from a boom­ing gin in­dus­try. A to­tal of 60 mil­lion bot­tles of gin were sold last year, enough for 1.68 bil­lion gin and ton­ics. We can pro­vide a va­ri­ety of tonic wa­ter flavours – cu­cum­ber and mint, Scot­tish rasp­berry and au­tum­nal ap­ple.” www.wal­ter­gre­gors.com
