One of the most popular refreshmen­ts hand-crafted by this Pitsligo company is Walter Gregor’s tonic water. Gregor was a 19th century minister in the village, and his garden is used to grow some of the botanicals used in making the tonic water. “We have a small team who grow the botanicals and bottle the drinks in a converted steading a few fields away from his old manse,” says owner Claire Rennie. “We have benefited from a booming gin industry. A total of 60 million bottles of gin were sold last year, enough for 1.68 billion gin and tonics.
