AS a chef, this time of year is one of my favourites for produce – as the long summer days turn into crisp autumn mornings, we look forward to the comfort food that warms us from the inside out.
Autumn’s seasonal ingredients are rich in colour and flavour, providing us with endless inspiration to get into the kitchen and whip up something delicious – and nothing could be more festive than a pumpkin-based dish for October.
These vibrant orange delights hit the shelves throughout the spooky season, ready to be carved into the perfect Hallowe’en jack o’ lantern.
Once the festivities are over, all too often these pumpkins are discarded, when the leftovers could be turned into something cosy and comforting for dinner.
