Top Scots pastry chef to team up with world-renowned restaurant on Skye

The team behind the worldrenow­ned Three Chimneys Restaurant has welcomed acclaimed Scottish pastry chef and winner of Bake Off Crème de la Crème 2016, Helen Vass, onboard for a collaborat­ion on the Isle of Skye.

Helen will be working with the top restaurant’s head chef Scott Davies and his team for 10 weeks and will have to chance to pass on her skills and experience to the Skye team while she gains invaluable firsthand experience in the restaurant’s pastry section, preparing the breads, desserts and petit fours for the lunch and dinner menus, as well as afternoon tea on arrival for guests staying in The House Over-by, the restaurant’s luxurious 5-star accommodat­ion. There will also be sweet treats to prepare for the bedrooms and breakfast baking for guests served each morning.

Helen has been making waves with her patisserie and consultanc­y business, Dulce by Helen Vass, since it opened last year, with the brand popping up in a number of high-end establishm­ents across the UK serving sumptuous five-course menus with wine flights, entirely devoted to desserts. Most recently, Helen was asked to create an Afternoon Tea event at a number of well-known venues in Scotland, including Gleneagles.

Shirley Spear, co-owner of The Three Chimneys, said: “I have been following Helen’s progress with great interest and met her recently at the Inverness/loch Ness Great Tea Party Event held during Scottish Tourism Week at Inverness College. Helen is full of natural enthusiasm for her work, has an infectious personalit­y and absolutely loves teaching young people. I’m very much looking forward to seeing what the next 10 weeks bring for both the Skye team and Helen.” Helen stated that she was very excited to begin the project, she said: “I hope to bring my modern pastry style and new ideas to the menu as well as being able to pass on my skills and knowledge from my time working and training over in Barcelona. Following this collaborat­ion, Helen’s longer-term plans involve starting-up a special Scottish Pastry School devoted to training the Pastry Chefs of the future.
