We’ll spare you the joke about what cheese says when it looks in the mirror, and just tell you about the special halloumi-based menu that’s available at Edinburgh’s Otro from Monday 8 April until Sunday 21 April. In collaborat­ion with Visit Cyprus, head chef Maciek Szymik has created a menu that celebrates this squeaky cheese, with dishes including coddled egg with smoked halloumi (£6), halloumi waffle BLT (£6.50) and lamb and halloumi meatballs with burnt aubergine, pomegranat­e and mint (£7).
