Organic lemon posset
Clean, sharp, classic – and it’s easy to make. Use good organic lemons and double cream as the zest and juice from the fat lemons make this a stunning delight. Serve with new season strawberries and a piece of shortbread for pudding perfection.
Makes 10 small glasses
900ml double cream
225g unrefined caster sugar
4 organic lemons, zested and juiced new season strawberries to garnish icing sugar
1 Bring the cream and sugar to the boil in a thick-bottomed pan.
2 Add the juice and zest of the lemons. Infuse for 5 minutes.
3 Pass through a fine sieve into a jug, and then divide between the glasses. Refrigerate until set.
4 Garnish with strawberries and a dusting of icing sugar. Perfect served with a piece of shortbread.
