Make your own... FROZEN YOGURT

- Frederick Faulkner

It’s hard to resist the temptation to grab a tub of ice cream from the freezer and get stuck in.

The trouble is, ice cream is packed with fat, sugar and not much else.

As a very occasional treat, that’s not likely prove a problem. But for regular snacking, especially on hot days, you might be better served by trying my new super-food ‘summer snack’ – a simple-as-it-can-get home-made frozen yogurt.

All it requires are three ingredients: natural yogurt (which provides valuable protein), bananas (a rich source of potassium) and walnuts (great for omega-3).

Give this a try at home; it’s incredibly simple and deliciously refreshing.

It easily serves two, but make sure you leave it out of the freezer for a few minutes to start melting and soften up slightly.

I like to serve mine with a grating of lime zest.

INGREDIENTS

500g natural Greek yogurt 2 very ripe bananas 30g walnuts

Strain the yogurt with a muslin cloth for a couple of hours. This thickens the yogurt and gives it a creamier texture.

Blitz the bananas and walnuts in the blender to make a puree.

Once the yogurt has strained, add it to the blender and blitz again on a high setting for a few minutes.

Spoon the mixture into a dish, cover with clingfilm and freeze overnight.
