2 sprigs of rose­mary 3 bay leaves 700ml gin

Place the in­gre­di­ents in a jar, seal and shake. Start check­ing af­ter 2–3 days. Strain and bot­tle once you’re happy with the taste.

In a high­ball glass, pour 50ml of your herb-in­fused gin over ice and top up with gin­ger ale. Dec­o­rate with a sprig of rose­mary and a slice of lime.
