250g rasp­ber­ries 50g caster sugar 700ml gin

Place all the in­gre­di­ents in a jar, seal and shake. Leave in a cool dark place for a fort­night, giv­ing it an oc­ca­sional shake, be­fore strain­ing and bot­tling.

Serve one part rasp­berry gin to three parts prosecco and gar­nish with fresh rasp­ber­ries.
