Dirty Chai

A Dirty Chai is a chai latte with a shot of espresso. This version bypasses the tea, instead adding chai spices to espresso coffee and brewing in a moka pot. Not got one? Use a cafetière or filter drip system instead.

Serves 1-2

for the chai spice blend: 4 tbsp ground cinnamon 3 tbsp ground ginger 4½ tsp ground cardamom 1 tbsp ground black pepper ¾ tsp ground nutmeg

¾ tsp ground cloves for the coffee: 1 tbsp chai spice blend (above) Espresso coffee, ground for moka pots (enough to fill your moka basket)

125ml milk

1 Make your chai spice blend by combining all the spices together. Store any unused chai spice blend in an airtight container.

2 In a bowl, stir 1 tbsp of chai spice blend into your ground espresso.

3 Fill the lower chamber of your moka pot with near-boiling water and carefully fit the basket. Pour the blended coffee into the top of the basket and fit the top part of the moka pot. Place on the hob and listen out for the ‘stromboli’ (a boiling sound, named after the volcano), then turn off the heat.

4 When the chai coffee has brewed into the top half of your moka pot, transfer to mugs, adding more boiling water if required. Stir in sugar or honey if you prefer a sweeter drink.

5 Froth your milk of choice and use to top your dirty chai. Serve sprinkled with a small amount of spice blend, if you fancy.
