Cheat’s spiced baked beans
Everyone has a tin of beans in their cupboard and, with just a few additions, this humble staple is suddenly a whole new dish.
Serves 2
1 tbsp sunflower oil
1 onion, thinly sliced
1 garlic clove, crushed
½ tsp ground cumin
½ tsp ground turmeric
Pinch of dried chilli flakes
1 x 400g can of baked beans in tomato sauce
Small handful of coriander, finely chopped
1 Heat the oil in a medium pan, add the onion and soften over a lowmedium heat for 8–10 mins, or until it begins to turn golden-brown. Add the garlic, cumin, turmeric and chilli flakes and cook for a further 1–2 mins, stirring frequently to avoid sticking.
2 Pour in the baked beans and continue to stir for 2–3 mins until the beans are heated through, and the onion and spices are combined.
3 Remove from the heat and stir in the coriander. Season to taste with salt and pepper.
Cook’s note: Add more chilli, if you prefer it spicier. But remember that heat from chillies will increase with each mouthful, so keep some yogurt close by to stir through!
