Chocolate fudge cake

Make this portable pud before you head out as a treat to keep you going at the end of the day

Makes one cake

170g butter 170g dark brown sugar 4 large eggs 225g cocoa powder 55g self-raising flour ½ tsp vanilla essence

for the fudge topping:

55g butter

55g granulated sugar 6 tbsp water

170g icing sugar 2½ tbsp cocoa powder

1 Preheat the oven to 180C/Fan160C/ Gas 4. In a large bowl, cream together the butter and sugar, before adding the eggs, one at a time.

2 Add the cocoa powder, flour and vanilla essence and gently mix until it's all incorporat­ed.

3 Pour the mixture into a greased and lined baking tin and bake for 40 mins, or until a skewer comes out clean from the centre of the cake. Leave to cool.

4 Meanwhile, make the topping by melting together the butter, sugar and water for about 5 mins. Remove from the heat and stir in the icing sugar and cocoa until combined. Pour over the cake and allow to set before serving.
