The Simple Things



Sap from the white birch ( Betula alba) or silver birch ( Betula pendula) is one of the healthiest juices you can drink. Unusually it tackles the body’s two cleansing and purificati­on systems – the liver and the kidneys – at the same time, and helps them to flush out toxins, uric acid and excess water from the body. Ginger fires up the digestive juices and, according to Ayurveda, the libido, too.

Serves 1

90ml birch sap* 30ml ginger syrup (recipe below) 22ml freshly-squeezed lemon juice Splash of soda water Wisteria blossom 1 Chill a glass thoroughly in the freezer or fridge for 2 to 4 hrs, respective­ly. Alternativ­ely, fill the glass with ice.

2 Pour the birch sap, ginger syrup and lemon juice into a cocktail shaker and fill two-thirds of the way up with ice. Cover and shake hard for 20 secs.

3 If you used ice to chill your glass, empty it out. Strain the cocktail into the glass. Top with soda water and garnish with the wisteria blossom.
