IN SEASON STRAWBERRIES

We don’t like to take away from strawberries and cream (the last thing we’d want is the taking away of strawberries and cream!) but here are a few new ideas for things to do with a glut of strawberries...

l Strawberry butter. Whizz a handful of strawberries with half a pack of butter and a tablespoon of sugar. Your scones will thank you. l Strawberry and brie toasts. Top tiny bruschettas with a slice of brie, a halved strawberry and a basil leaf. Drizzle with balsamic glaze. l Strawberry salad dressing.

Blend equal parts olive oil and apple cider vinegar with a few strawberries, salt and pepper. l Strawberry salsa. Mix chopped tomatoes, strawberries, spring onion, lime juice and coriander with a little olive oil and vinegar. Beautiful with barbecued chicken or fish.
