Scottish Brie & red onion chutney soda bread
You’ll need
● 150g plain flour
● 125g wholemeal flour
● 1tsp bicarbonate of soda
● 1tsp caster sugar
● 1tsp salt
● 30g butter
● 200ml buttermilk
● 50g Scottish Brie, diced
● 25g red onion chutney
● 1 egg, whisked for an egg wash
Method
1. Pre heat the oven to 180C. Rub the plain flour, wholemeal flour, bicarbonate of soda, sugar, salt and butter together until it resembles a texture similar to breadcrumbs. Add in the buttermilk and bring together until a dough is formed.
2. Lightly flour your work surface. Knead the dough for five minutes until the texture changes to a smoother consistency. Bake spray and line an oven tray and transfer the shaped loaf carefully on to it.
3. Mark a cross in the top of the loaf, spoon the red onion chutney into the cross and top with the diced Brie. Egg wash the loaf and bake in the pre-heated oven for 30 minutes.
