Cod en pa­pil­lote

I love cook­ing en pa­pil­lote as the food cooks in its own steam, keep­ing it so juicy and flavour­some. You can make the parcels up to 30 min­utes ahead of time, but any more and the paper can get quite soggy. Raw cour­gette has a lovely mild flavour and good crunch – ideal for a salad.
